This year I thought it would be fun to share another of my family's holiday recipes.
My husband has been making these cheesecake/cupcake desserts since he was a teenager. I wouldn't say it's the only reason I married him, but it helped sway my decision. . .
I love the holiday season because, even in the crazy rush, it's about gathering with family and friends and remembering to be grateful.

Here is the recipe for my husband's Cheese Cake Cup Cakes
Makes appox. 24
Ingredients:
3 - 8oz Philadelphia Cream Cheese
1 - 14oz can condensed sweetened milk
3 Eggs (Beaten)
2 tsp Vanilla extract.
1 Box of Nilla Wafer Cookies (2 if you are having a child help)
Double cup cake tins (foil on the outside, paper on the inside)
Directions:
Preheat oven to 300 degrees. Beat cream cheese until fluffy (works best if cream cheese is at room temp and soft). Gradually add eggs, vanilla condensed milk. Mix well. Place 1 wafer in each tin pour mix on top of wafers filling the tin to just over 3/4 full. Bake 20 minutes or until set, fork test.
Top with your favorite fruit toppings. You can used the canned pie filling or anything that you like on your cheese cake.
